Crispy fried chicken( CFC)




I always wanted to try crispy fried chicken at home as all were a big time fans of it( specially my brother). For this weekend party I had that on the menu. It was worth trying. Everybody liked it. It was crisp on the outside, juicy and succulent on the inside.Batter fried chicken and chips, forms a great combination. Here is the recipe...

Ingredients:
2 kg chicken( i used the leg and thigh pieces)
meat tenderiser - 2 tbsp
oil for deep frying

1st seasoning:
all purpose flour or maida - 1 cup
corn flour - 1 cup

For the batter:
eggs- 2 nos
sparkling water - 1 cup
maida - 1 cup
chicken stock cubes - 1 nos
chilly powder - 1 tbsp
garlic paste - 1 tbsp

Final seasoning:
maida - 1 cup
corn flour - 1 cup
chicken stock cube - 1 nos
chilly powder - 1 tbsp
bread crumbs - 1 cup

Method:
Rub meat tenderiser to the chicken and marinade overnight. Bring the chicken to room temperature before frying( as chilled chicken gets brown on the outside soon, but is raw inside). Mix eggs along with sparkling water slowly, now add it to a mixture of maida, chicken stock cube, chilly powder and garlic paste and form the batter and keep aside. Now dip the chicken in 1st seasoning, then in the batter and then dip in the final seasoning( final seasoning ingredients should be mixed well forming a coarse powder like consistency. Deep fry in hot oil for 10 min or until done( oil should be hot, but must be fried in low sim). Serve with tomato sauce, french fries

Note:
If you don't wish to use a meat tenderiser, you may soak the chicken pieces in salt water for 6 hours or more( this keeps the inside of the chicken juicy and succulent). I had used a deep frying pan to fry the chicken. It would be great if one can use electric deep fryer( fry in hot oil for 15-20 mins). I have not used salt in my recipe as the chicken stock cubes contains salt. If you prefer to add more salt, you may do so.
