Green peas pulav
Green peas pulav is very lightly spiced, aromatic and so full of flavour.Very easy to prepare and goes well with almost all the gravies and side dish. I cook it almost every Saturday due to its freshness, lightness yet richness combination( quite a rare combo though). And I bet you'll can't stop yourself with the second serving. Here goes the recipe
Ingredients:
Basmati rice - 4 cups
ginger-garlic paste - 2 tsp
green peas - 1 small tin (or about 200grams fresh peas)
Spring onions - 100grams
carrots(optional) - 1nos medium sized
green chilies - 4 nos
cloves - 4 nos
cardamom - 3 nos
Cinnamon - 1 small
vegetable stock cubes
oil -2 tbsp
dalda or vanspathi - 2 tbsp
ghee - 1 tbsp
water - 8 cups
salt for taste
Method:
In a stew pot add oil dalda and ghee,once hot add whole spices like cloves, cardamon, Cinnamon and fry.Add ginger-garlic paste, green chillies and fry.Now add carrots,green peas, spring onions( 50 grams only)
, add the vegetable stock cubes, water,and bring to boil. Check for salt, add more if required( it should be slightly more as the rice is cooked in the same liquid). Now add rice, and cover and cook until its done.Garnish with spring onions. And serve hot along with some gravy.
Note:
Onions can be used instead of spring onions, I don't use onions, as the pulav would change in color. I add carrots as it forms a great combination of its orange color with green color of peas. Paneer tikka masala, vada curry, and any other non-veg curry goes well with this.
